Russia manufactures probably the biggest variety of milk products in the world
Russians love milk and everything that is made of it: СМЕТАНА (sour cream), КЕФИР (kefir), РЯЖЕНКА (ryazhenka), СЫР (cheese), МАСЛО (butter), ТВОРОГ (cottage cheese / farmer’s cheese), ТВОРОЖОК (tvorozhok) and etc.
Here is a brief description of these products
Kefir is a cultured, creamy product with amazing health attributes. It’s thicker than milk, but thinner than yogurt, and sour. Russians just drink it plain or use it for cooking pancakes or salads.
Ryazhenka is made from baked milk by lactic fermentation. Ryazhenka in Russia is considered more of a ‘desserty’ drink even though there is nothing sweet about it. But it does have a more delicate, almost addicting, flavor and its creamy texture makes it more of a treat than other cultured milks. Because of that it’s considered to be a children’s drink.
Сметана (smetana / sour cream) is a dairy product produced by souring heavy cream. In Russia people eat it with pancakes, soups, especially borsch, and even put it into salads.
Творог (tvorog / cottage cheese or farmer’s cheese or quark) is a very popular and nutritious dairy product that is commonly used in a variety of baked goods as well as eaten plain or with and berries.
Творожок (tvorozhok) is a tasty dessert made of tvorog. It is sweet. It can have raisins, chocolate, jam as one of its ingredients.
Йогурт (yogurt), масло (butter) and сыр (cheese) are quite the same as everywhere in the world, though some people from Europe say that Russian cheese is not so good:(
Some of these products are quite hard to find abroad. That’s why many Russians miss them a lot when not at home.
